Sweet Potato Roll

Ingredients

200 gm – Sweet potato
200 gm – Shruti’s jaggery
4 teaspoon – Ghee
4 teaspoon – Rice flour
1 cup – Grated Coconut
Instructions
- Let’s grate the boiled or steamed sweet potatoes and set it aside.
- In a pan add 3 teaspoons of ghee.
- Add Shruti’s jaggery powder to the heated ghee and mix well.
- Add 1 glass of water and stir well till it boils.
- Then add rice flour slowly to the boiling Jaggery syrup and stir well.
- Once the mixture thickens, add grated sweet potato and stir well until it becomes thick and separates from the pan.
- Keep it for 5 minutes to set.
- To shape it, grease your hands.
- Take a small portion of mix and roll it by your hands to your desired shape. Here I am making a cylindrical shape.
- Take grated coconut in a plate and dip the rolled sweet potato mix in coconut and roll it to cover all the surfaces.
